| Who the heck is Pableaux Johnson? Posted by Y.A. Tittle Dude is constantly referenced as a "local New Orleans food writer" in national articles, such as in the New York Times. (here's one example, but I've seen him referenced many times previously LINK) I've never run across anything he's really written about locally or seen any local publication with his reviews. If you have ever read Gumbo Tales by Sara Roahen, he is the Pableaux she writes about in the chapter on red beans. As to whether or not that is his real name, I am not sure.
