I watched the video but can’t tell if its the original cast doing the voices, if so and on a streaming service like Netflix it could be good. If not, it will probably suck.

Not sure it would work in the modern day. It pushed the envelope in the 80s and 90s. It's fairly tame by today's standards.

The original cast all signed on to voice it but Katey Sagal recently said she passed on it. Not sure if everyone else did too.

You woefully underestimate Hollywood's ability to shitify a known entity.
One way would be to make a wise, non-caucasian LGBTQ+ANUS69 couple live next door to them. The couple would be presented as beloved by all in the neighborhood and their appearances would be to gently, but sagely, attempt to point the Bundy family in the right direction. Over time the Bundys would grow to love them and depend on their wise counsel with the show ending with Bud becoming a drag queen and Al becoming an ally to "genderqueer" whateverness.
