Here’s my understanding:

there’s collusion to keep prices high regardless of weather conditions until Easter which is the peak of demand. After that the prices fall in accordance with how much farmers and spillway fisherman are willing to take. This happens until they grow too big and stop being as plentiful as water temps force them to burrow in the mud and make babies

Big crawfish is keeping the prices up, by keeping those 2-pound crawfish that were found in Tejas, west of the Sabine river.

This past year and even the year before crawfish weren’t bad at all. Especially considering the inflation on everything else
