Hard to beat a fresh red snapper out the Gulf of Mexico.

True. I like it fried in plain yellow corn meal.


The throats are the best part of a red snapper. I knew the captain’s on a couple of the snapper charter boats. I would go visit while they were cleaning fish for the customers. I would get a couple of crab boxes of snapper carcasss after they were filleted. It was easy to get several dozen large throats.

Within easy reach for me---------redfish on the half-shell on the grill.

2nd would be deep fried catfish.

We are blessed with an abundance of very good eating fish in the gulf. There are multiple species which when prepared identically would be hard for most eaters to tell apart.

Depends on how im cooking or eating the fish. Red snappers all around good for when I’m grilling, making spring rolls, soups. Mackerels for brasing, yellows fins for sashimi and damn good as jerky, catfish fried.
