So it appears that the new MacBook Pros only support one external monitor display. I have two large monitors that I would like to be able to use with the new MacBook, and I've been searching the web for ways around this. There isn't much other than "WTF Apple?".

has anyone successfully hooked up two external monitors to the new MacBook Pro?

You can use a DisplayLink USB device to add up to 6 monitors. They've put out M1 drivers for their USB display adapters. As long as you get a USB3-based one and don't need to be playing games on it, it'll be fine for most tasks.
