yup - mom has full POA over my dad.

my Uncle actively advocated for his other brother to have the ability to drive, despite having dementia. he went to get a prescription filled a mile from his house at a Publix, in Mobile - he was pulled over and detained south of Cullman, AL after he stopped in Dodge City to get gas, and got back on the interstate going north in the south bound lanes.

my Uncle is a stupid fricking moron.

does your FIL and his brother (uncle) own a family business, investment property, land together ?
How did he get POA when it should have been your MIL and your wife ?
is the uncle included in the living will stating he gets a % or $$$ from the estate once that time comes ?

I was in a similar situation as my FIL was diagnosed with Alzheimer's and dementia prior to his passing in 2017. His then wife (2nd wife) had an attorney notarize a will, and divorce papers "after his diagnoses" and when he was in a nursing home and didn't even know who he was. That bitch took the house, his car, emptied his checking and savings accounts, signed over his monthly oil check royalties to my FIL's brother, antique furniture, shotguns and rifles, and quit paying the nursing home bill. In the amended will, my FIL left nothing to his 2 daughters and 6 grandchildren. My wife didn't find out until her azzhat uncle showed up at the funeral home bragging about getting the oil royalty checks. If either the ex- or my wife's uncle were confronted alone by my wife today, I truly believe she would go 100% SONIC on their arse with a lead pipe and beat them to within an inch of their life.

You can give your POA to a total stranger if you want to. Not advisable but there's no law against it.

As a curator, you can make every decision on behalf of the interdicted, and this includes who can visit them. The interdicted party basically loses all their civil rights as a human being.

From my understanding, the court (or at least in my case) doesn't choose. You have two people who volunteer as a curator and undercurator. They are the checks and balances for and with one another.

This. Seeing his brother deteriorate is a wake up call for him about his own age, mortality and future. The uncle is resisting reality because he doesn't want to accept it.
