I’m somewhat of a catfish guru. So I do have some authority when it comes to catfish.
The best catfish can be ruint by adding dill relish, or otherwise bad tartar sauce. The best catfish in Texas I’d have to separate by location, because there are many good spots. In Dallas or Houston or San Antonio, there’s no better catfish than Pappadeaux. I know many will hate, but it’s simply flat out true. The best catfish in central texas is a place called catfish parlour. The best catfish in East Texas is at Clear Springs in Nacogdoches and second best is at big pines lodge in Uncertain. I’m not too sure if west Texans eat catfish or not, but I wouldn’t suggest ordering off any menu west of Ft. Worth.
In Louisiana, another one people will hate on, but Ralph and Cackoo’s is legit, baw. Best in the Shreveport metro area. The best catfish in New Orleans is a little place called Hi Hat, they also have whole fried okra which is among the best I’ve had anywhere.

The original Clear Springs in New Braunfels is legit too. It was a must-stop on river trips back in the day.

i feel bad that you stepped foot in that atrocious place. shreveport has at least 5-6 better catfish options. r&c is barely edible

Because if so, I'm going to greatly disagree. And I'll probably disagree inside of Houston as well.

Give me the catfish at Blind Tiger in Shreveport over Ralph and Cackoos.
