What defunct brand from classic NOLA is ripe for a relaunch to make a billion?

McKenzie's bakery fried chicken is top of my list. Get yourself a decent location with a drive through and make sure you hire Chick-Fil-A type employees and NOT Popeyes type employees sit back and enjoy your new fried chicken financed yacht.

In theory yes. But it amazes me how younger people only eat white meat tenders and not bone in chicken. Thus the success of shitty arse Cane's.
Chicken breast is literally the worst piece of the chicken - dryest. Give me popeyes wings and thighs all day over a breast.
But yeah. McKenzie's chicken was awesome.

It wont make a Billion, but a re-launching a more modern Pontchartrain Beach would absolutely work in this market.

It would be awesome if someone brought back K&B. I am sure they got a ton for selling out but man that was a good chain.
