It's more complicated than that, geographically and based on olive varietal. But the ex raved about the Oleoestepa (hojiblanca) on the train (tiny MRE sized Tabasco bottle to be used on a sandwich) from Marseilles to Barca to the point I didn't buy any other brand ( Oleoestepa) It tastes like more than just oil, for sure, and it's distinct. I just buy the 2.5l tin, and fill smaller green bottles from Bezos, but you do have to pay attention to when harvesting season is so you don't get stuck trying to buy out of season. So it became a bit of a thing. I averaged about $90 a year on olive oil, always the same brand and olive type.

It's kind of like tasting Kerrygold salted butter for the first time. You didn't know what you were missing.

The right olive oil from Spain is said to be the best in the world. It is strictly regulated there.
