I use exclusively animal fats - usually lard - or olive oil.

Avocado (for high heat), Olive (for low heat), Beef Tallow, and Bacon grease are the main oils I use.

You can buy fat trimmings from a butcher or best bet is to take trimmings from beef cuts (brisket, roasts) and freeze until you have enough to render down on the stovetop/oven/smoker.

You will get a tasty side product of almost a crackling of what is left behind that doesn’t render down.

Once you have liquid tallow, pour over a filter into a mason jar and let it cool and solidify and ready to use from there.

Pretty much agree. I'm a 67 y/o physician, boarded in Fam Med and Pathology. Those facts don't necessarily mean I know what I'm wrting about, but I do have the benefit of time and exposure, not only to live humans as patients but also basic science as well as research over the years. After COVID, I basically don't completely trust anything I read or hear from ANY source. That doesn't mean I think all research and findings are garbage, I am just very slow to accept assertions. This is a near-infinite area of discussion so I'm going to go no farther in this forum, but I would suggest asking questions is never a bad idea.

There’s plenty of evidence showing how good Omega 3 & 6 fatty acid are for humans which is largely what Canola Oil is.

The below study shows that switching from butter to Canola,Corn or Olive oil lead to lower total and cardiometabolic mortality. Eating more Omega 3 & 6’s leads to lower/unchanged markers of inflammation. Believe what you want but that’s a huge study that followed 500k individuals for 20+ years.

The difference had nothing to do with hfcs and everything to do with not consuming 180+ calories multiple times per day.

Pretty much all are 100-130 calories per tablespoon.

I don’t personally care what is “healthier” in other definitions of the word, but some do. Sounds like you are specifically referring to your weight, which means calories. All the same in that regard.

If I’m trying to lose weight, I use spray oil so a lot less goes into what I’m making. And I try to make dishes that aren’t oil heavy.

It wasn't long ago that "they" were telling us to switch from those horrible animal fats to plant-based fats like vegetable oil and canola oil. Now "they" are telling us the opposite. Wait a few months and a new study will come out switching it back.

Don't stress so much about what you eat. Stress causes too many major health issues.
