Used to play catcher so trying to think of the benefits.

Say your right knee is down, it would make moving and blocking to your left easier but moving to your right much worse. You want your legs to be spread fairly wide to cover/block a wider area and having a right knee down and moving to the right would make it harder to get that leg out imo.

I can't imagine catching with one knee down and the pads your able to use on your calves make it pretty easy on your knees so I don't really see one knee down being much less wear on the body.
