I don't know why most Star Wars ships don't have weapons on the back (or sides). At least, have one or more multi-directional turrets controlled by a second person like Dak, or a computer or an R2 unit.

The Death Star Trench Run unnecessarily sacrificed a lot of defenseless X-wing pilots running interference by following the leader as they couldn't shoot the Tie Fighters who were following behind them. And if the Tie Fighters had multi-directional guns, they wouldn't had to even enter the trench. They could've shot down at the X-wings from above.

An actual in universe answer would be that adding an extra laser and the apparatus to have it rotate would reduce speed/mobility and increase size so attack surface. To add those components to a ship would need a power core like you'd see on the Millennium Falcon or Outrider or Slave 1. X-Wings and A-wings were built for fast attack and dodging enemy fire.

i think the general idea was they were designed to be like fighter jets, and F-16s, etc, dont have multi-directional guns either.
