We had a family member order a dish with a "modification ". German chef came out of the kitchen to explain why it should be eaten the way he prepares it. It was epic and much laughs are had anytime someone brings it up.

Only times I've ever sent something back in my entire life was the 2/3 occasions where I ordered a med rare steak and it came out well done. Every time I was as nice as possible and each time the chef came out to talk to me and apologize because it was at a place we have frequented for 20 years. Treat people with respect and they will generally treat you with respect. Sending a dish back because it has an issue isn't a problem. Sending a dish back and being an a-hole about it is.
