The groom wants to go to a titty bar at least two of the nights. We're early/mid 30s. We are cool with anything touristy.

Tittybars are plentiful in Phoenix and there are a couple in Scottsdale south of Old Town.
You have tons of food options in Scottsdale, including a lot of Tex-Mex style places. If you want authentic my favorite is Los Dos Molinos in south Phoenix. Lupe's in Old Town is very popular but I wouldn't call it authentic Mexican.
