I really enjoyed these 2 Zeldas but I hope the next iteration drops the stamina and weapon breaking mechanics. Also I hope we one day get a Wind Waker and Twilight Princess remastered port

Seems clear based on dev comments that they're sticking with open world, but I agree with you that I hope they find a nice way to marry the open world with more classic Zelda stuff

I liked the stamina stuff but weapon durability, in any game, is horrible. I can't stand it, especially with how it's implemented in these two games and, as someone else said, weapons break in 5-6 hits.

You can disable those mechanics on PC.
