CBS Saturday Morning doing a story on Cajun Table restaurant in Lafayette. Restaurant owner is also a crawfish farmer.

I'm not a crawfish farmer, but I've always wondered if restaurants trying to serve boiled crawfish seemingly earlier and earlier every year isn't part of the problem.
You have places starting to advertise the stuff in mid-January for fricks sake.

Gun play here in LC at a boil spot cause someone gots his sparkin spot. Went fo bugs and ended up in jail.

That where the issue seems to be. Naturally crawfish start reaching maturity March-April, but crawfish/rice farmers will flood the fields in October/November to have an earlier artificial season. But with the drought and colder weather it was harder for the crawfish to become viable.

That and you can’t control the levels in the spillway and basin, you gotta trap when Mother Nature gives you the water , not like the fields where they can pump water

You do realize that this helps the natural life cycle of crawfish
Only about 5% of ponds are fished in Nov and it’s mostly continuous grass ponds way down south
Only about 15% are fished in Dec

They are responding to what customers are asking for. That, and Texas people having discovered crawfish, is messing with demand.

I find that eating them au natural off the floor is best. You get that satisfying crunch that you don't get after boiling and soaking.

I love crawfish but shrimp is versatile and in running for greatest food.in the History of Western Civilization.
