My nephew is 10 and my niece is 7. Every year until now I've asked my sister what kind of gifts they would want or need. This year I'm doing gift cards for books and video games. They're old enough to pick out stuff they want. So I definitely think your gf's kids are old enough for similar OP.
Either way, talk to your gf about it.

Find a unique store for the girl, maybe a sports store for the boy. Set your budget. Take them to the store and let them shop and choose their own present. The real gift is the experience together.
In Covington there's an art / jewelry store (Once in Awhile) that works perfectly for girls (almost regardless of age).
HJ Smith's Sons is amazing for males. My 8 year old son once came home with a Samurai sword. Mom wasn't thrilled but he loved it.

I don't think many clerks will sell Ultra to an 11 year old no matter a gift card or not.
Where does that thought come from? Ulta wants your money. I had an 11 yr old girl virtually disintegrate my credit card at Ulta. That sh*t's expensive.
As for OP, she would love to choose a mini backpack from Hot Topic.
Pretty sure in most states you must be 21 to purchase Ultra. In my day you could buy it at 18, but that was in the early 80s.

Ulta beauty box for the girl (if she’s girly) and a Stanley cup.

Give them the same thing your girlfriend wants from you...
US dollars ... lots of US dollars.
