Any suggestions? I've listened to the Stormlight Archive and I'm currently starting on the physical Mistborn books.. Also working through the physical Wheel of Time books.

From Sanderson, Warbreaker is also pretty good and relevant to Stormlight.
I loved the Red Rising series by Pierce Brown. Technically sci Fi but reads more like a fantasy series. I went through all 6 available audio books in maybe 2 weeks
Recently listened to "The Will of the Many" and thought it was pretty good. Book 2 comes out next year

It's unfinished but The Kingkiller Chronicles audiobooks are very good quality.

Definitely the Dresden Files. Might be the best audio series out there. Just a heads up, the first couple of books are kinda rough (but entertaining), but they find their groove and the series is a blast. James Marsters ftw.
Wheel of Time is great, especially if you have been on a Sanderson kick. Also, Joe Abercrombie's books with Stephen Pacey's narration is just sublime.

Ryiria Chronicles starting with Theft of Swords and ends with Heir of Novron. Great great story and ending and Tim Gerard Reynolds in one of my favorites narrators. He does the Red Rising series that another poster mentioned as well.
Gentlemen Bastards - Locke Lamora. Amazing books and narrator Michael Page is awesome.
Look up books by narrator Simon Vance too.
Lastly, The Blade Itself, by Joe Abercrombie. Stephen Pacey narrating is awesome
That should get you through like 300 hours or so to start
