Really? We have a track team. They win titles as a team. The Universities all compete as teams. I think what you mean to say is "excluding track."

Sarah Finnegan was an 23 time All American gymnast and Ashley Gnat was an 18 time All American.

Track hands out national titles for different disciplines, and is a highly individual sport. The team score is combined to determine team championships, but the individual scores determine individual champions. I know you know all of this, but I'm pointing it out because that's a lot different from the kind of team sport the OP is referring to. Tommy White, for instance, didn't win the co-national rbi championship. Skenes didn't win the strikeout national championship.
Track is kind of goofy in how they set so many different distances, giving opportunities for all those different "championships" for doing things that all mostly involve running. And naming them an all-American for every individual accomplishment, instead of for everything they do, as a whole, once per year, as they do in regular team sports.
Dylan Crews is almost as decorated as he could possibly be for his sport. If they handed out all-American recognition for each thing that he excels at, every year, he'd probably be a 27 time all-American.
