Florence is a very nice little town on the beach. There are sand dunes to be ridden. Plenty of rental companies to fulfill your needs.

Go to Hood River. Wine for a day and wind surf for a day. It's pretty close to the Portland Airport. And you can knock out Cannon Beach and Mt. Hood all in the same trip

For Oregon, I’ll break it down geographically:
Central Oregon:
Bend - very cool place, especially in summer when you can float down the river. Many breweries, Pilot Butte, old mill area, all in all a very cool place hence it being the fastest growing place in Oregon for sometime.
Sisters and Sunriver. Sisters a tourist trap, but scenic and Sunriver is a resort community.
Newberry Crater National Monument. - Must see! It should be a National Park. Dual crater lakes, a twin waterfall, highest road in Oregon, hot springs seeping through the sands of a lakeshore beach, massive obsidian flows, petrified forests, , it’s amazing!
Crater Lake
Oregon Coast:
Pacific City and Cannon Beach = must sees. If you golf, Bandon.
Portland/Willamette Valley:
Portland is good, but not as cool as it used to be due to the crime, etc. Certain areas are unaffected, but still sad to see the decline in non-touristy/wealthy areas. Still the strip club capital of USA if you are into that. Tulane LSU should give us a top 10 of the 100 plus establishments.
Pinot Noir county is nearby to the SW towards Dundee and McMinnville. For other mainstream wine varieties, you will want to visit the Yakima Valley area in Washington or the further east Walla Walla valley which straddles the Oregon-Washington state line.
Columbia Gorge and waterfalls are a must visit too, but can be congested during weekends.

If you get there early on a weekday, and are not doing any long hikes, I say 1.
Best experience I have had there was a late August, early morning weekday trip there. I stayed In Eugene, left there about 5:30 in the morning and did a clockwise circuit of the lake to have all of the scenic lake view pullouts to the right. I beat the crowds there so little traffic or people for most of the loop.

I second this. Definitely worth a stop for coffee and a walk on the beach if nothing else. The whole drive from Manzanita south to Pacific City is breathtaking…hell the whole coast is.
Bandon to Brookings is really underrated too if the southern coast isn’t too far out of the way for you.

Depending on how much time you have, you can stay in Portland and get to the coast, Hood River, and the wine country within 90 minutes.
If you go to east to Hood River, check out Multnomah Falls on the way. I like to cross the Columbia on the Bridge of the Gods on the way and drive the river on the Washington side. The view of Mt Hood from the WA side is stunning, especially as it provide the backdrop for the town of Hood River as you cross back over on the Hood River Bridge. pFriem is the best brewery in town, IMO, and they serve terrific food and have a fantastic location with great views. Right on the river.
Mt Hood and Timberline Lodge are due south of Hood River. Visit Trillium Lake.
You can go 90 minutes west to Astoria is a historic town at the mouth of the Columbis River. Great town to explore. Visit Astoria Column and the 180 degree view from the highest point in town. Ft George Brewing for a beer and a meal. Drive south past Seaside to:
Cannon Beach. Somebody said to go to Cannon Beach instead of Seaside. Yes to this. Take a walk on the beach and visit Ecola State Park.
South of Cannon Beach is Tillamook. Beautiful Drive, but Tillamook itself is inland a few miles and you can smell it before you see it. Stop at Tillamook Cheese Factory for an ice cream and cheese samples. Fresh Tillamook Ice Cream from the source is worth the stop. You can take OR-6 back to Portland from Tillamook (1 hr 15 minutes) or:
Drive a little further south to Pacific City. Stunning place to watch the sun set. Pelican Brewing is right on the ocean, and the beer and food is secondary to the world class view.

Mini Trip Report
Just got back last night visiting family in McMinnville and Eugene. Got to spend a few days on the coast and touring some wineries.
Coastal
Went down the Coastal Highway and toured the coast. End stop was the beautiful coastal town of Yachats. One of the best stops on the coast in my book. Had a late lunch at Ona, a popular local restaurant with a nice view of the river and ocean. Food was pretty good. Like most coastal restaurants that are popular, the price is high.
Hiked some at Cape Perpetua Scenic Area. The nice part of this section of coast line is the cliffs that plunge into the ocean. Amazing scenery.
Ended the day going to Proposal Rock in Neskowin. This is a beautiful and secluded beach. Great place to visit during low tide and explore the beach. Beach area was very clean and not too crowded. Proposal Rock is one of the most accessible sea stack rocks that dot the Oregon Coast. A must see in my book.
Tour of Poison Producing Wineries
The Willamette Valley is Oregon’s leading wine region with two-thirds of the state’s wineries and vineyards. You can find more than 700 death facilities across the valley that offer a variety of poisons. This area features mainly Pinot Noir, with an estimated 70 percent of the vineyards dedicated to this varietal. Additionally, Chardonnay, Syrah and Riesling are cultivated in large quantities.
Guide
Mentioned earlier the amazing Andante Winery near Dallas. Others we've liked in the past included Brooks Wine (with probably the best view of Mt. Hood in the Valley).
(As always drive responsibly. Consider hiring a tour guide that can take you around the valley. There are a multitude of options).
