Lots of cooked foods freeze well.
Anything that has a gravy or water base will stay good in a freezer. With the exception of potatoes. IMO, potatoes only stay good for a month or two in the freezer.
So, when you have the time, cook up a big pot of some kind of stew like dish and freeze it in meal size containers. A soup, gumbo or jambalaya [with out the rice] are also good to freeze.
We cook large pots of spaghetti sauce and freeze for quick meals later.
Another quick meal.... make up a double or triple size batch of sloppy Joe mix. Freeze in meal size zip lock bags. Heat it up in micro while getting the bread ready.
The same can be done with ground meat and Taco mix. I usually keep some cheese in the fridge for making Tacos.
