I could see the au jus, but I'd skip the ranch. Just make sure you add the juice from the peppers too. It's really good.
I make a horseradish mayo to go on them.
We do them on ciabata rolls alot.

This sounds like Mississippi Roast instead of Italian Beef.
ETA: And you really need Marconi Hot Giardiniera as a condiment for the sandwich……
